Classic Yirgacheffe features bright floral aromas with notes of jasmine and bergamot. The taste reveals lemon, peach, and tea-like sweetness. The finish is long and elegant.
Processing
Most lots from Yirgacheffe are washed, which emphasizes acidity and cup clarity. However, natural processed lots with more fruity and fermented character are becoming increasingly popular.
Brewing Recommendations
Yirgacheffe is best expressed through filter methods: V60, Chemex, or Aeropress. Recommended grind — medium, water temperature — 92-94°C.
